I adore madelines – they remind of drinking Italian Sodas with my father! – but I always thought they were massively complicated to make. Yours have turned out perfectly! St Johns is Louis favourite restaurant as well – I’ve never been (which makes his vast experience of it somewhat suspect, I now see…) BUT Im obsessed with the bakery! Have you been to Maltby St on a Saturday ever?? GO! And eat the cream filled doughnuts from St Johns. They are TO.DIE.FOR (nutritionally, taste wise… everything!!!)
